Sandra Kay Rekstad (Hermansen), 79, of Plymouth, MN, passed away peacefully on March 23, 2025, in Robbinsdale, MN.

She was preceded in death by her beloved parents, Norman and Hazel Hermansen.

Sandi was born on January 6, 1946, in Minneapolis, MN and grew up in Brooklyn Center, MN. She attended Earl Brown School and later graduated from Brooklyn Center High School, where she was honored as Homecoming Queen and named Miss Brooklyn Center. Her beauty, both inside and out, shone brightly from a young age.

Sandi is lovingly survived by her three children: Rick Rekstad of Plymouth, Derek Rekstad of Maple Plain, and Curt Rekstad (Jackie) of Elk River. She was an incredible mother, always offering support, love, and guidance. Sandi’s legacy continues through her six precious granddaughters: Kari, Elin, Abby, Ally, Anna, and Averi, who brought endless joy to her life.

She is also survived by her sister, Carol, numerous nieces and nephews, and a close-knit circle of friends who all cherished her warmth and kindness. Sandi’s love extended to her beloved dog, Izzy B, who brought her much joy.

Sandi will forever be remembered for her radiant smile, her infectious laughter, and her ability to light up every room she entered. She had an incredible spirit, and her love touched everyone who knew her. Sandi was a loving mother, grandmother, sister, aunt, and friend who leaves behind a legacy of love and warmth.

Though Sandi is no longer with us, she will be deeply missed, and her memory will live on in our hearts. She was loved beyond words and will remain a guiding light to all who knew her. Her strong faith in the Lord was central to her life, providing her with strength and inspiring all those around her. Sandi's devotion to God, along with her grace, kindness, and love, will continue to guide and inspire us.

A Celebration of Life for Sandi will be held on Saturday June 21st, 2025 11:00am-1:00pm in Otsego, MN. A light lunch will be served.
